Keto Pork Tenderloin Marsala

I am a huge fan of chicken and have lots of recipes for everything from the whole roaster to chicken wings, but there are times when I can’t do one more night of the bird.

Pork tenderloin is great for nights like those.

I had two tenderloins and some mushrooms in the fridge and knew there was a way to make it into dinner. After some searching and planning, I came up with the idea for a Keto Pork Tenderloin Marsala.

What I absolutely love about this dish is the simplicity of it. I get rave reviews each and every time the fam sits down to this meal. Even though my boys don’t like the 'shrooms - which means there are more for my hubby and I - they still love it. 

The tenderloin is delicious and could easily rival something you’d get at a nice restaurant, but less expensive and healthier. The biggest added bonus is knowing exactly what’s in it.

I like to serve this dish with some roasted veggies or my favorite salad and homemade dressing.

Keto Pork Tenderloin Marsala

Ingredients

  • 2 pork tenderloins
  • 3 tbsp olive oil
  • 3 tbsp butter
  • 1 yellow onion, halved and sliced in strips
  • 1 package of mushrooms, sliced thin
  • 1 cup of Marsala wine
  • 1 ½ cups of chicken broth
  • Salt, pepper and garlic powder

Instructions

Pat dry the tenderloins and cut into 1 inch medallions. Season well with salt, pepper and garlic powder.

In a large frying pan, heat up ½ the butter and ½ the olive oil over medium-high heat.

Brown the pork in two batches. It should take approximately 3-5 minutes per side. You don’t need the pork to be well done but should be a little pink in the middle.

Transfer the first batch to a plate and then add the rest of the butter and oil before adding in the remaining pork.

When the second batch is done, add the sliced mushrooms and onions until soft. Add Marsala and cook until Marsala has cooked down.

Add chicken broth and put the pork back in and cook for another 10 minutes.
