Chicken with a Kick!
I’ve been cooking since as far back as I can remember. It all started with my fierce independent streak rearing it’s head at the ripe old age of 3. I had packed up my little suitcase, full of stuffed animals and pet rocks (remember those?), and was headed out to forge my way in the world. But before I could make it out the door, my mom called me back into the kitchen.
She told me I was welcome to leave... just as soon as I could reach the stove.
Good point, mom. How could I possibly take care of myself, or all of the strays I’d take in along the way, if I couldn’t even manage to turn the stove on?
That was a pivotal moment in my life and really shaped the person I’ve become. I learned to cook at a young age. I was never going to let something as silly as feeding myself ever get in the way of my wanderlust again. I even started my own cookie business by the time I was 15.
Yeah, there was no stopping this girl. Just tell me I can’t do something to see all of what I CAN do and then some.
When I became a mom at 24, I knew I needed to do more than just reach the stove or bake cookies. I invested in cookbooks of all kinds. I watched shows like Martha Stewart to get ideas for healthy meals to feed my daughter as she started eating real food. One of those shows ended up being the inspiration for my Chicken with a Kick recipe.
Over the years, it morphed from a dish served over pasta, to this fantastic stand-alone main course.You could totally serve this over spaghetti squash or cauli-rice for some added veggies, but it is fabulous without either of these things.
I serve it with some keto-cheddar biscuits and even the teen boys don’t miss the extra carbs.
If you have family members that aren’t staying low-carb or keto, feel free to make them a side of quinoa pasta to go with it.
The most time consuming part about this dish is chopping the chicken and veggies so I like to do that when I’m meal prepping for the week. That way I have it ready to go on nights when I might be running short on time or just don’t feel like spending more than 20-30 minutes in the kitchen.
Just because I can reach the stove now, doesn’t mean I want to spend much time standing at it.
Chicken with a Kick!
- 2 lbs chicken breast, cut into 1-inch pieces
- 1 red pepper, cubed
- 1 yellow pepper, cubed
- 2 zucchinis, chopped
- ½ red onion, diced
- 3 cloves of garlic
- 1 tbsp olive oil
- 1 tbsp + extra steak seasoning like Simply Organic Steak Seasoning
- 1 tsp salt
- Parmesan cheese for topping
In a large pan, saute garlic and onions until they start to soften.
Add all vegetables and salt, continue to cook for an additional 5 minutes.
Coat chicken with the steak seasoning
Add chicken and cook for another 12-15 minutes until chicken is no longer pink.
Serve topped with shaved Parmesan cheese.
