Keto Beef with Spinach and Ricotta Cheese
This past weekend I thought I had it all figured out. I knew exactly what I was going to make for dinner and was feeling pretty good about it, especially because I had so much going on(what’s new about that?!). Until...I had to go to the store to pick up one of the main ingredients: zucchini.
And so began my quest for finding zucchini. I wasn’t looking to buy out the store, I just needed 3.
After going to multiple stores and coming up empty-handed, I started to get a little worried. I could substitute spaghetti squash and it would work but the only spaghetti squash available were minion size - no way was I going to go through all of the prep-work for these tiny impostors.
I stood in the produce aisle of the third store and decided then and there to buy spinach and figure out a way to make it work in the dish.
What ended up happening in the kitchen that night was all unicorns and rainbows. I took what was going to be my typical low-carb spaghetti and turned it into a stand-alone dish that was not only easy, but the family went a little nuts for it.
Full disclosure - I made gluten-free noodles to go with it for the teen boys. They ate it all and then asked for seconds. Since I usually don’t get more than grunting noises coming from their pie holes, actual words asking for more is a good indication that I hit it out of the park again.
The takeaway is that rolling with the punches and fearlessly trying new things is a great way to create a little magic of your own. Go forward and be fearless in your own kitchen. You just never know what kind of happy accident might turn into a new favorite.
Beef with Spinach and Ricotta Cheese
- 2 lbs of 85/15 ground beef
- 1-5 oz package of fresh organic spinach
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 ½ cups ricotta cheese
- ½ cup of fresh grated parmesan + extra for top
- ¾ tsp garlic powder
- 1 tsp salt
- Optional: Pinch of red pepper flakes
In a large frying pan, brown up beef with the onion and garlic.
When the meat is cooked through, add fresh spinach and stir it in over the next 3-4 minutes until the spinach is wilted.
Add in seasoning and mix well.
Stir in ricotta and Parmesan.
Cook for an additional 2-3 minutes until the cheese is melting.
Taste to see if more seasoning is needed.
Top with Parmesan cheese and a pinch of red pepper flakes for a little kick.
