Having a Ketofied 4th of July

I remember my first Keto 4th of July - a friend invited us over to her house to enjoy a day of family, fireworks, and food. I was looking forward to some much-needed friends and family time but wasn’t sure how the whole food situation was going to play out. After all, I was only 2 months in and still trying to navigate the traveling-and-eating-out-while-keeping-it-keto thing.

I soon realized the only way I was going to be able to go to the function and stay in my keto lane was by making some food that I could bring and share with everybody else.

Memorial Day the Keto Way

I can’t think of anything better than spending time with family and friends, filling my loved ones with fantastic food and making memories to last a lifetime. Those are all the things I look forward to now that summer is right around the corner.

I’m a lot like Monica from Friends in the fact that I love hosting get-togethers at my house and aim to be the hostess-with-the-mostest.

Fighting Off Colds and the Flu the Keto Way

My son has gone to bed early for the last three nights. He's been plagued with headaches and an on-again, off-again queasy stomach. Now my husband and daughter are showing signs of something resembling a cold or flu virus.

My guess is all of the added stress from the holidays has compromised our immune systems and opened the door for some nasties to invade our world. Bring on the chicken soup!

This Holiday Season, Don't Get Sick!

Over the last few days, I've been out and about and coming into contact with people from all walks of life. You wouldn't have to look at a calendar to be able to guess that it's the holiday season: the pinched faces and muttering under the breath are just a few of the symptoms of stress on display.

I'm also hearing people cough throughout the stores, complaining of sore throats, headaches and lethargy. All signs our bodies are under stress. If you know me at all, you know I've got just the things to help get through the holidays in one piece.

Keto Dine and Dash: Curry Beef with Sweet Potato and Spinach

Most days during the month of December, you can probably find me on the go, grabbing food, on a paper plate, eating over the kitchen sink. Hey, don’t judge. At least I stop all of the holiday madness long enough to eat!

The last thing I have time for is a complicated dinner. I need something I can throw together, cook, eat and clean up in less than an hour. I have some tried and true recipes I turn to during these loooong days and nights.

Find a New Favorite Appetizer

As the party invitations begin to flood in, or get sent out, the menus become the main focus for these holiday get-togethers. Whether you are throwing your own bash, or are invited to partake in the obligatory "Ugly Christmas Sweater" party, food is always high on the priority list.

Phone a Friend

We need friends. We especially need friends during periods of high-stress. As much as we like to think of the holiday season as joyous, more often than not, it’s just more work added to an already-full plate (lol).

In order for me to not completely lose my sanity, gain weight, and head into the new year with regret and a long list of resolutions, I know I need to surround myself with my peeps. Specifically, my keto-peeps.

Keto Thanksgiving Dessert: Pumpkin Cheesecake

Thanksgiving is right around the corner but, luckily, this isn’t my first go-round with keto holiday meals. I’m on my third year and know I’ve got lots of meal options, especially with my Keto Cookbook to refer to. I’ve got everything covered; appetizers, sides, main dishes and desserts.

It seems like I could serve pretty much anything for the main course as long as I go big for the dessert bar. One of the biggest hits at Chez Parker is my Pumpkin Cheesecake.

Holiday Meal Planning the Ketogenic Way

I have a love/hate relationship with this time of year. I LOVE the idea of holidays; spending time with loved ones, in a house decorated for the 3 holidays in as many months. I HATE the OCD side of me that won’t let me sit down until everything is in its place once I start the decorating. My life is one, big lesson in aiming for balance in all I do.
